Knife Sharpening – In Store Service

Bring your knives to Kitchen Samurai in the JPN Concept Store and will hand sharpen your knives on a series of water stones.

Sharpening:

For European knives we start with a 220 grit Water stone and then refine the edge with 800 Grit and 1000 Grit stones. For Japanese Blades we continue polishing the edge with a 3000 grit, 6000 grit, 8000 grit and finish with a 12K grit stone and a leather strop.

Every knife is constructed individually from different materials so each knife needs unique attention. We’ll sharpen most European knives to 22 degrees, Japanese knives to 15 degrees ad the finest/handmade Japanese blades to 11 degrees. These are the guidelines we follow for what we believe give the sharpest knife with great edge retention, but we’re willing to sharpen to personal preference.

Repairs:

Repairs we perform include re-aligning the blade profile, fixing tips, repairing chips in the blade, and polishing the blade face.
