Steel & Construction
At the core is SG2 (R2) powdered stainless steel, a modern high-performance steel known for exceptional edge retention, fine grain structure, and corrosion resistance. SG2 can be hardened to a high level while remaining tough and stable, allowing the knife to take a very sharp edge that holds significantly longer than most conventional stainless steels. The core is clad in stainless Damascus, combining strength, durability, and visual refinement with excellent stain resistance.
Maintenance & Care:
Thanks to its fully stainless construction, this knife is relatively easy to maintain compared to carbon steel blades. Hand-wash and dry after use, and avoid leaving it wet for extended periods. Despite being stainless, SG2 is hardened for performance, so avoid cutting bones, frozen foods, or very hard ingredients to prevent chipping. Regular whetstone sharpening will keep the edge performing at its best.
