Description

The Yoshikane SKD Nashiji Gyuto 210mm is a hand forged gyuto knife built around a semi-stainless SKD steel core, delivering serious cutting performance with everyday ease of care. The 210mm length is the most versatile size in the kitchen, and this is a gyuto knife that earns its place as the one you reach for first, equally capable on proteins, vegetables, and the full run of daily prep.

Yoshikane Hamono has been forging knives by hand in Sanjo City, Niigata since 1919, now led by fourth generation blacksmith Kazuomi Yamamoto. Sanjo is one of Japan’s most respected blade making regions, and Yoshikane has built its reputation on exceptional forging and heat treatment. What sets their knives apart is the grind: ground remarkably thin behind the edge, this gyuto cuts like a much lighter blade while keeping the sturdiness of a proper workhorse.

As a gyuto knife, the Yoshikane carries a gently curved double bevel edge suited to both push cutting and a rocking motion, making it the Japanese counterpart to the Western chef’s knife. The nashiji pear skin finish on the stainless cladding gives the blade a softly textured, misty surface that hides minor marks and helps release food from the blade.

Steel and Construction

The core is SKD semi-stainless steel, a high carbon tool steel hardened to 64 HRC, hammer forged in a san mai construction with the hard core wrapped in softer stainless cladding. SKD sits between carbon and stainless: it takes and holds a keen edge like a carbon steel, with excellent edge retention, yet stays easy to sharpen and far more forgiving than a pure carbon blade. The thin grind and high hardness combine to give cutting performance well above the knife’s weight class.

Maintenance and Care

Because the core is semi-stainless rather than fully stainless, hand wash and dry the blade immediately after use and never leave it soaking. With normal care it is unlikely to develop rust, though the exposed core edge can take on a light patina over time, which is harmless. Avoid bones, frozen food, and hard squash. Maintain the edge on a whetstone, which this steel takes to easily, and it will reward you for years.
