Yoshikane Hamono is a highly respected Japanese knife maker based in Sanjo, Niigata, with a lineage dating back over a century. Known for exceptional grinds and refined heat treatment, Yoshikane knives are built with a strong focus on cutting performance, balance, and long-term usability. This Kiritsuke Gyuto blends the commanding profile of a kiritsuke with the versatility of a gyuto, resulting in a knife suited to both professional and serious home kitchens. The long, flat edge excels at push-cutting and chopping, while the aggressive, pointed tip allows for precise detail work, clean protein slicing, and controlled tip use.

The blade features a nashiji finish, giving it a soft, textured appearance reminiscent of pear skin and highlighting the knife’s handcrafted nature. Yoshikane’s signature Sanjo-style grind delivers excellent cutting feel with strong blade stability and predictable performance. The blade has a solid spine near the heel that tapers gracefully toward the tip, offering strength, stability, and nimble control where it matters most.

Steel & Construction

At the core is SKD semi-stainless steel, a high-performance tool steel prized for its balance of edge retention, toughness, and sharpening ease. SKD takes an exceptionally fine edge and holds it well, while being far less reactive than traditional carbon steels. The core is stainless clad, greatly reducing maintenance demands and making this knife more forgiving in a busy kitchen environment. While technically semi-stainless, the exposed edge may develop a subtle patina over time, especially with acidic ingredients.

Maintenance & Care:

Although SKD steel is more corrosion-resistant than carbon steel, good habits will ensure peak performance. Always hand-wash and dry the knife after use, and avoid leaving it wet or dirty. The blade is hardened for edge retention, so avoid cutting bones, frozen foods, or very hard ingredients to prevent chipping. Regular whetstone sharpening will keep the edge performing at its best.

Gyuto

Gyuto (Chef’s) Knife (牛刀包丁 – pronounced: Gyūtō Bōchō) literally translated from Japanese means ‘Cow Blade’. ‘Gyu’ means Cow and ‘to’ means blade. The name stems from its original use to slice and disjoint large cuts of beef. These days the Gyuto is comparable to the Western-styled chef knife and is viewed as an all-rounder in the kitchen.

The Gyuto is the ultimate multi-purpose kitchen knife and is perfect for chopping, slicing, mincing and dicing boneless meat, fish, vegetables, fruit and herbs. The blade profile is well suited for tap-chop or thrust-cut. The slight curve from the middle of the blade leading to its pointed edge is used to rock-chop. Its name also suggests that it is perfect for cutting meat and doing light butcher work. It can be used to pull-cut softer meats or to push-cut more muscular cuts of meat.

The Gyuto features a longer blade providing versatility for cutting larger produce while the tip of the blade allows it to be nimble enough for precision work. The edge is flat from the heel to the belly with a slightly rounded profile from the belly to the tip. The hard steel used in manufacturing makes the double-bevel edge much sharper than Western chef’s knives and retains the ultra-sharp edge for much longer.
