Description

The Nigara SG2 Migaki Tsuchime Petty 150mm is a Japanese petty knife for precise, everyday preparation. Its compact size makes it a useful companion to your main chef’s knife, particularly when slicing fruit, preparing shallots or trimming boneless meat.

Made by Nigara Hamono in Hirosaki, Aomori Prefecture, this knife comes from a Japanese forge with a blade making tradition spanning more than 350 years. Nigara’s roots lie in sword making, with that heritage continuing through its kitchen knives today.

A petty knife fills the space between a small paring knife and a full sized gyuto or santoku. This 150mm model provides useful reach for slicing while remaining easy to manoeuvre around smaller ingredients. It is a practical choice when you only have a few things to prepare or need more precise control than a larger blade allows.

Steel and Construction

The blade features an SG2 powdered stainless steel core with stainless steel cladding in a three layer construction known as san mai. With a reported hardness of approximately 63 to 64 HRC, it offers strong edge retention for regular kitchen use.

SG2 is valued for its combination of wear resistance, corrosion resistance and ability to take a fine cutting edge. It suits cooks who want lasting sharpness with straightforward stainless steel care.

The Migaki Tsuchime finish combines polished areas with a hammered texture, giving the blade a distinctive appearance. The octagonal walnut handle adds warm wood tones and flat faces that help you feel the knife’s orientation in your hand.

The double bevel edge makes this petty knife suitable for both left and right handed users.

Maintenance and Care

Hand wash with mild detergent and a soft sponge, then dry thoroughly before storing. Do not put the knife in the dishwasher or leave it soaking. Stainless steel still requires proper care to prevent corrosion, and prolonged soaking can damage the wooden handle.

Use a wooden cutting board and avoid bones, frozen food and other very hard ingredients. Do not twist the blade while it is in the food or use the tip for prying.

Maintain the edge with a suitable whetstone when sharpening is needed. Store the knife in a way that protects the cutting edge from contact with other utensils.

Best for: Fruit, smaller vegetables, trimming boneless meat and detailed everyday preparation.

Kitchen Samurai Ease of Use Rating: Everyday All Rounder. A practical stainless petty knife to use alongside a gyuto or santoku, with basic Japanese knife care.

HRC: 63/64
