This Sakai Takayuki knife set pairs two essential Japanese knives with the stone to keep them sharp, making it one of the most complete and beautiful starting points available for a serious home kitchen. The knife set brings together the VG10 Hammered Damascus Gyuto 210mm and the matching Petty 150mm, both with striking blue Pakka wood handles, alongside a Suehiro combination whetstone for proper at home maintenance.

Sakai Takayuki is made by Aoki Hamono in Sakai City, Osaka, a city with over 600 years of blade making history that began with the forging of samurai swords. That heritage shows in these knives. Both blades feature a VG10 stainless steel core hardened to 60 HRC, wrapped in 33 layers of hammered Damascus cladding that produces a flowing wave pattern unique to every blade. The blue Pakka wood handles are water resistant, hard wearing, and give the set a distinctive modern look.

How the knives in this set work together

The gyuto and the petty are designed to complement each other, covering the full range of kitchen tasks between them. The 210mm gyuto is the workhorse: a curved double bevel blade built for breaking down proteins, slicing vegetables, and handling the bulk of your prep on the board. The 150mm petty is its nimble partner, small and precise where the gyuto is large and powerful. The petty handles the close, detailed work the bigger blade is too long for: peeling, trimming, segmenting fruit, slicing shallots, and any task done in the hand or on a smaller scale. The Suehiro CR-2800 Combination Whetstone

A Japanese knife is only as good as its edge, and this knife set includes the stone to maintain it. The Suehiro CR-2800 is a dual sided combination whetstone made in Niigata, Japan. The 280 grit coarse side repairs and reshapes a dull or damaged edge, while the 1500 grit medium side sharpens and refines it back to keenness. It is a soaking stone, so you immerse it in water until the bubbles stop before use. It arrives with a case that doubles as a water tray and storage holder, plus a nagura cleaning stone to keep the surface smooth and consistent. It is the ideal first stone, coarse enough to fix problems and fine enough to put a genuinely sharp edge back on both knives.

Steel and Construction

Both knives use a VG10 stainless steel core hardened to 60 HRC, a cobalt alloy steel developed by Takefu Special Steel and prized for its balance of lasting sharpness and ease of sharpening. The core is clad in 33 layers of hammered Damascus stainless steel, which protects the hard cutting edge, adds toughness, and creates the signature wave pattern. Being stainless throughout, this set is low maintenance and forgiving, a good choice for cooks who want performance without the upkeep of carbon steel.

Maintenance and Care

Hand wash and dry both knives immediately after use. Never put them in a dishwasher and never leave them soaking. Avoid bones, frozen food, and hard squash. Soak the whetstone before each use, rinse and air dry it afterwards, and keep its surface flat with the included nagura stone. Looked after this way, both knives will stay sharp for years.
