At 150mm it is long enough for real work and short enough for control, with a 33-layer Damascus pattern and hammered tsuchime finish that make it one of the best looking knives in the range.
Sakai Takayuki knives are made in Sakai, Osaka, a city that has been forging blades for more than 600 years and is still regarded as the home of Japan’s finest kitchen knives. Sakai built its reputation on a division of labour where forging and sharpening are done by separate specialists, each a master of their part, and that tradition is exactly what you are holding here. This is a serious knife from one of the most respected names in the trade.
The petty knife is the Japanese take on a utility blade, the one you reach for when the job is too small or too detailed for a gyuto. Peeling and trimming, slicing shallots, segmenting citrus, deveining, tidying up a fillet, the precise close work that a long blade cannot do cleanly. Most people who own a good petty find it becomes the knife they pick up first, and a VG10 Damascus one makes that daily job a pleasure rather than a chore.
Steel and Construction
The blade is a VG10 core at 60 HRC, clad in 33 layers of softer stainless steel that are folded and forged to produce the flowing Damascus pattern. VG10 is one of the most trusted stainless knife steels in Japan: it takes a genuinely sharp edge, holds it well, and is fully stainless and corrosion resistant, so it gives you high performance without the upkeep of a carbon blade. The hammered tsuchime finish across the face is part of the forging character and simply looks stunning. The blue Pakka wood handle is a stabilised, moisture resistant material that is both hard wearing and striking against the Damascus.
Maintenance and Care
Hand wash and dry it straight after use and never put it in the dishwasher. VG10 is stainless and forgiving, so this is an easy knife to live with, but keep it off bones, frozen food, and hard squash, which chip edges on any knife. When it starts to drag, a few passes on a whetstone brings the edge back. The Damascus and hammered finish need no special treatment beyond keeping the blade clean and dry.
