The Sakai Kikumori AUS10 ND Petty 150mm is a Japanese petty knife for the smaller jobs that make up everyday cooking. Whether you are slicing an apple, preparing shallots or trimming a chicken breast, its compact size helps you work comfortably around smaller ingredients.
Sakai Kikumori is the knife brand of Kawamura Hamono, based in Sakai, Japan. Founded in 1926, the company works with specialist craftspeople to supply Japanese kitchen knives for professional and home use.
A petty knife fills the space between a small paring knife and a full sized chef’s knife. At 150mm, this model offers enough length for useful slicing strokes while remaining easy to manoeuvre for more detailed preparation.
It makes a practical companion to a gyuto or santoku, particularly when preparing small portions or working with limited board space. For those quick jobs that do not need a larger blade, it is a useful knife to keep close at hand.
Steel and Construction
The blade uses AUS10 stainless steel, a Japanese knife steel that offers a practical balance of edge retention, corrosion resistance and sharpenability.
For everyday use, that means a cutting edge suited to repeated preparation, with straightforward maintenance between sharpenings. Its stainless properties are particularly useful when working with fruit and other acidic ingredients, although the blade should still be washed and dried after use.
The compact petty format keeps the cutting work close to your hand, giving you control when trimming and slicing smaller ingredients.
Maintenance and Care
Hand wash with mild detergent and a soft sponge, then dry thoroughly before storing. Do not put the knife in the dishwasher or leave it soaking. Stainless steel still needs proper care to prevent corrosion.
Use a wooden cutting board and avoid bones, frozen food and other very hard ingredients. Do not twist the blade while it is in the food or use the tip for prying.
Maintain the edge with a suitable whetstone when sharpening is needed. Store the knife so that its cutting edge cannot knock against other utensils.
Best for: Fruit, smaller vegetables, trimming boneless meat and detailed everyday preparation.
Kitchen Samurai Ease of Use Rating: Everyday All Rounder. A practical stainless petty knife to use alongside a gyuto or santoku, with basic Japanese knife care.
