This Nigara Aogami Super Tsuchime gyuto knife is a 210mm chef’s knife built around one of the most respected carbon steels in Japan, finished with a hammered tsuchime surface and set on an octagonal olive wood handle. It is the kind of knife you buy once and keep sharpening for years, and it is made by one of the most historically significant forges in the country.

Nigara Hamono works out of Hirosaki in Aomori Prefecture, in the far north of Japan. The forge goes back more than 350 years, starting out making swords for the Tsugaru clan in the early Edo period, and the craft has been passed down through eight generations of blacksmiths. That sword-making heritage still shows in how these knives are finished. 

A gyuto is the Japanese take on the Western chef’s knife, and it is the most versatile blade in the kitchen. The 210mm length is the sweet spot for most home cooks and professionals: long enough to handle a chef’s board with confidence, short enough to stay nimble. You can rock it, push cut with it, and take it through vegetables, meat, and herbs without switching tools. The blade on this one is ground thin behind the edge, so it falls through produce rather than wedging.

Steel and Construction

The core is Aogami Super, also called Blue Super, widely regarded as the finest high carbon steel made for kitchen knives. It takes an extremely keen edge and holds it for a long time, and because it is carbon steel it is quick and rewarding to bring back on a stone. Nigara hardens it to 63 to 64 HRC. The core is clad in stainless steel using san mai construction, which means the reactive carbon core is sandwiched between two softer stainless outer layers. That gives you the cutting performance of Aogami Super while making the bulk of the blade easier to look after. The tsuchime hammered finish across the face is the maker’s signature and is part of what makes a Nigara instantly recognisable.

Maintenance and Care

This is a carbon core knife, so treat it that way. Wash it by hand and dry it straight away, paying attention to the edge where the Aogami Super is exposed. Do not leave it wet or sitting in a sink. The carbon edge will develop a patina over time, a natural greying that is not a fault and actually helps protect the steel. Keep it off bones, frozen food, and hard squash, and keep it sharp on a whetstone rather than a pull-through. Look after it and it will outlast almost anything else in your kitchen.

Best for: home cooks and professionals who want a genuine carbon steel gyuto with serious edge performance, and who do not mind a quick wipe-and-dry routine to keep it in top form.

Kitchen Samurai Ease of Use Rating: 7 out of 10. The blade geometry and edge are a joy to use, but the exposed carbon core asks for a little more care than a fully stainless knife, so it loses a couple of points on convenience rather than performance.
