This Yoshikane Shirogami 2 Kurouchi gyuto knife is a 210mm chef’s knife built around a White 2 carbon core, clad in stainless steel with a rustic kurouchi finish and set on an octagonal stabilized birch handle. It is one of those knives that gets talked about for good reason, and it earns every bit of the reputation.
Yoshikane Hamono works out of Sanjo City in Niigata Prefecture, one of Japan’s most celebrated metalworking regions. The workshop was founded in 1919 and is now run by Kazuomi Yamamoto, the fourth generation to forge under the name. Yoshikane is a small shop that has built its reputation on precise hand forging, excellent heat treatment, and edge geometry and finish that punch well above the price. Among people who know Japanese knives, a Yoshikane is a knife you buy once and keep for life.
A gyuto is the Japanese counterpart to the Western chef’s knife, and this gyuto knife is the most versatile blade you can put on a board. This one is where Yoshikane’s thin grind really shows itself. Rocking, push cutting, working through vegetables, meat, herbs, and fish, it does all of it, and it does it with a lightness and precision that makes cheaper knives feel clumsy afterwards. At 210mm it is the length most cooks reach for first, and the blade tapers noticeably down the spine, so it feels nimble in the hand rather than heavy.
Steel and Construction
The core is Shirogami 2, also called White 2, a very pure high carbon steel prized for the razor keen edge it takes on a whetstone and how responsive it is to sharpening. Yamamoto hardens it to 62 to 63 HRC. It is a low contaminate carbon steel, so it sharpens beautifully and takes a fine, biting edge with very little effort.
The core is clad in stainless steel using hand-forged san mai construction, where the carbon core is sandwiched between two stainless outer layers. This is the clever part: the stainless cladding covers most of the blade and gives you real corrosion resistance across the flats, while the reactive carbon steel is kept right where it matters, at the cutting edge. The kurouchi finish, the dark forged surface left on the blade, gives it its rustic, handmade look.
Maintenance and Care
This knife is lower maintenance than a fully carbon or iron clad blade thanks to the stainless cladding, but the exposed carbon steel at the edge is still reactive. Wash it by hand and dry it straight away, every time, and do not leave it wet or sitting in the sink. The edge will develop a light patina over time, which is normal and protective rather than a fault. Keep it off bones, frozen food, and hard squash. Sharpen it on a whetstone rather than a pull-through, and the White 2 will come back to a superb edge quickly and easily. Look after it and it will reward you for years.
Best for: cooks who want a genuine carbon steel gyuto knife with the edge and sharpening feel that carbon gives, but with the easier upkeep that stainless cladding brings, and anyone who wants a knife from one of Japan’s most respected small forges.
Kitchen Samurai Ease of Use Rating: 8 out of 10. The stainless cladding takes a lot of the worry out of owning a carbon knife, and the grind is a joy to use. It loses a couple of points only because the carbon edge still needs a proper wipe and dry rather than being left to its own devices.
