The Suehiro Cerax stones are versatile and work well with both harder and softer steels. The Cerax 320 offers a great sharpening feel, good feedback, and fast cutting. It’s excellent for removing coarse scratches left by lower-grit stones and for starting work on dull knives with minor nicks. For larger chips, consider starting with the Debado LD 200 instead (link to Debado LD 200).
The Cerax 320 is a medium-fast-wearing stone that requires regular flattening. We recommend using the Suehiro flattening stone or an Atoma diamond plate for this. (Suehiro Flattening stone Link)
This vitrified stone should be soaked for 5–10 minutes (or until most bubbles stop escaping) before use. While it can be stored in water, it’s advisable to let it fully dry occasionally to maintain its integrity.
